Breakfast
Begin with a satisfying anchor
Build breakfast from a grain or bread, a protein-rich addition and fruit or vegetables. Warm oats with yoghurt and berries, eggs with tomatoes on toast, or overnight oats with pear and seeds all follow the same simple rhythm.
If mornings are rushed, assemble the night before or keep a two-minute option available. Leftovers can also make an excellent breakfast.

Lunch
Layer colour, substance and crunch
A satisfying lunch needs more than leaves. Start with grains, bread or potatoes, add beans, eggs, fish, tofu or another protein source, then layer vegetables and a flavourful dressing.
For packed lunches, keep wet and crisp elements separate until eating. A jar of dressing and a small container of seeds can revive a simple bowl.

Dinner
Let one tray do the work
Tray meals are generous and forgiving. Roast two vegetables with a protein source, then add a quick grain, flatbread or potatoes and finish with a yoghurt, tahini or herb sauce.
Cook extra vegetables intentionally. They can become tomorrow's soup, sandwich filling or lunch bowl.
